Candied fruits, glazed with sugar, are used as pastries for the decoration of cakes. They can also be eaten alone, as dessert or candy. The preparation consists in replacing by osmosis the water of a fruit by sugar, the scarcity of water ensuring conservation



1-Fruit preparation Harvesting, washing, cutting, bleaching



2-Making fruit syrup Adding a sugar and glucose syrup solution to achieve osmosis



3-Obtaining candied fruit Separating the fruit from the syrup, draining the fruit and processing
