MAISON MARIE SEVERAC
SENERAC + 6 months Refining
Product’s description
Small farm cow tomme with raw milk of around 700 grams, made in Cantal, matured for more than 6 months in an underground cellar. Aroma of hazelnut, mushrooms, wild fruits, it can be kept for 4 months between 6 and 8°C. Appreciated as an aperitif in pieces to accompany a whiskey for example, you can cut it vertically. This type of cutting also allows you to slide it into small pans for raclette or to enjoy it at the end of a meal. If you cut it widthwise, removing the first slice where the crust with the cow's head is located, you have a cylindrical surface from which you can easily make shavings with a truffle bar for example, shavings which will perfectly accompany a salad, a gratin or any other dish of your choice...
