What is cardamom?
Originally from Abar in India, cardamom is a plant similar to reed whose green or black capsules contain seeds with a camphorous and aromatic scent. Introduced to Europe by Alexander the Great who brought it from India, the “Queen of Spices” quickly found its place in royal gastronomy. We find it mentioned in particular in the apothecary accounts of the House of Savoy, dated from the 14th century.
