Vanilla takes root in the eastern regions of the big island, those of Antalaha and Sambava with the more favorable humid climate.

Two types of vanilla in Madagascar: Split vanilla and noncoated vanilla. 

 The quality of the vanillas is defined according to their color but also according to their moisture content. The wetter a vanilla is, the darker it will be, supple and fleshy.

 Vanilla of «category A» or «gastronomic type»:
