Element obtained from the sacral section of the half-carcass. The rump consists of halved sacral vertebra and front part of the hip bone. The main muscles remaining in the rump are: Part of the light iliac muscle and part of dark iliac muscle.
Culinary use: As ingredient in stews, minced, and as base for soups.
