Caged love or physalis, is an orange-red berry which takes this enigmatic nickname from the serrated calyx which covers it. The variety that Rrraw combines with its grand cru raw chocolate is Aguaymanto from Peru where it is nicknamed “Inca berry”. Due to its high content of vitamins and antioxidants, physalis peruviana is considered a “superfood”. It reinforces the energy supply of our raw cocoa and gives it, as a gift, divine fruity and tangy flavors. The small cube of raw cocoa resists a little before letting itself melt. As it melts, it releases all the flavors it contains one by one. A few cocoa nibs crunch under the teeth and bring a final note of pure cocoa. The raw cocoa beans (Nacional and Criollo) are slowly ground in a stone mill with the other ingredients, 100% plant-based and essentially raw.
