Depending on their size, "La Truitelle" tins contain two to four whole rainbow trout, packed by hand. They are farmed by hand in the crystal-clear waters of mountain springs and streams, giving them a texture very similar to that of wild fish. Pre-cooked in steam, they are topped with an oil-free lemon and basil marinade, which adds a touch of acidity to this low-fat but richly flavoured recipe!
