Maison Martégale boutargue is made exclusively from wild mullet roe from the Haute Mer, delicately salted then dried and finally packed in wax to stop it maturing. This strong-tasting treasure of the sea is a real concentrate of iodine. With flavours that are as subtle as they are powerful, and a dense, melt-in-the-mouth texture, it's a delight for the taste buds.
