An artisan dry sausage flavoured with PDO Espelette chilli pepper, made from pure IGP South-West Pork using an ancestral and traditional local recipe. This sausage is made from lean meat and fat from the shoulders of coarsely chopped IGP South-West Pork (exactly 80% lean meat and only 20% fat). The result is a sausage with a delicious taste.
