This new recipe of pesto rosso is inspired by pesto alla trapanese, an old dish from the port of Trapani (Sicily). Inspired by the Genoese ships coming from the East, the sailors of Trapani created this recipe with the products of their land: tomatoes and almonds to which olive oil, basil PDO and Pecorino Romano PDO are added.
