On our estate we harvest this primitive olive, know in Spanish as acebuchina, from trees which are scattered throughout the property. The production is done with a traditional hydraulic press to maintain all the nutritional properties of the fruit. The yield is very low but the oil that we obtain is truely unique, sweet and yet spicy.
A French chef who tried it for the very first time, described it as a very complex oil.
