The olives are picked green in early November. The result is a green fruity with aromas of olive leaf, artichoke and green cabbage. Medium bitterness and spiciness.
Excellent in a vinaigrette, this oil can also be used to season a "tomato-mozzarella" and is perfect with all fresh cheeses. A nice idea: to include in a salty cake of olives and feta cheese, instead of butter.
