The brand new Re Pomodoro's Double Leavening Pizza: A 24-hour process inspired by the tradition of the best Italian master bakers. The initial dough of flour, water and sourdough is left to leaven for 16 hours for its natural enzymes to optimise its fragrance and flavour. After this cycle, the dough is kneaded again and Tumminia flour, made from an ancient Sicilian wheat, and extra virgin olive oil are added.
