Caciotta Stracchinata with truffles is a semi-hard cheese made with pasteurized cow's milk that has a thin, smooth and uniform rind on the outside, with a more or less intense yellow color depending on the degree of maturation; the

paste is compact and white or straw yellow in color and has holes inside. The flavor is sweet and delicate in young cheeses, slightly acidic and intense in mature ones.
