Our fillets are prepared and dressed by hand. Boneless, they are the leanest, noblest part of the tuna.

Made with organic extra-virgin olive oil from Navarre, this recipe is lightly salted and seasoned with PDO Espelette pepper, preserving all the flavor of this wild fish. 

No additives, colorings or other perlimpinpins! 

The tuna comes mainly from the Saint Jean de Luz - Ciboure fish auction in the Basque Country.
